Migrate docs from mkdocs-material to Zensical and refactor homepage

Replaced mkdocs-material with zensical, updating relevant config and commands. Also redesigned the front page to a grid layout highlighting specific use cases (Nyx Mission Design, Nyx Orbit Determination, ANISE SPICE replacement, and Hifitime) while retaining the original "Trusted by Industry Leaders" marquee.
